Butchery and Stocks





In this class, you will learn how to break down a whole chicken and whole fish to not only show off for your friends and family but also to save money by knowing how to do the hard work yourself. Michael Paoletti of Food, Booze & Hiccups will show you how to butcher a whole chicken and use the bones for stock, as well as break down a whole fish and create a fragrant fish fume.
