Culinary Summer Camps

FOOD is Science Culinary Camp

This is a very interactive, hands-on camp for children age 6-10 or age 11-14. Children will work side by side with a professional chef and learn the science of food. Each day they will do a different science experiment and link that experiment to the menu they are preparing for the day. There will be a take home from each class to re-emphasize the lesson for the day at home. The importance of safety and healthy food practices will also be taught. Join us this summer for our best culinary summer program yet.

EXAMPLE OF CLASS:

Day One: The Science of Making a Simple Dough: Yeast and How it Works

EXPERIMENT: Experiment with Yeast
MENU: Mini pizzas with various toppings and breadsticks
TAKE HOME: Pizza dough and sauce for a pizza to make at home.

Children will learn the art of making pizza dough and a rustic sauce as well as simple knife
skills to cut the toppings for the pizza.

Hand washing as well as a safe and sanitary way to clean the kitchen will be taught at the
end of every class to ensure that proper sanitary techniques are being used.

 






 

 

GROW Your Food Culinary Camp

This interactive culinary camp for kids will start out with teaching the basics of how to grow your own food. Children will plant their own herbs and small veggies in the first part of the week with the help of gardening teacher, Jessie Zenor, and they will learn recipes during the week to use these ingredients. They will learn the importance of fresh food. Clean up will be taught at the end of every class to ensure proper sanitary techniques are employed.

CLASS SCHEDULE:

Monday – Planting - Children will work with Ms. Jessie Zenor to plant herbs in The Mary C Herb Garden. They will also start their own seedlings to take care of for the week of the class and to bring home to plant at the end of the week. They will plant basil, thyme, dill and mint. They will also start their very own vegetable seedling.

Tuesday – Friday We will meet in the Cafe and each day we will learn a new recipe using the fresh herbs we planted in the garden. Children will be able to eat what they prepare in class each day.

Theme herbs for each day are:
Tuesday – BASIL - Panzanella Salad and easy Sausage Spaghetti with fresh basil or Basil Pesto Chicken Lasagna (older classes)

Wednesday – THYME – Chicken and Dumplings with fresh salad and thyme dressing

Thursday – DILL– Making Pickles with fresh dill and a creamy dill sauce for dipping fresh veggies

Friday – MINT – Mint Chocolate Brownies, Mint Chocolate Ice Cream


CAFE CLASSES

Club F.E.D.

Have you ever agonized over what to make for dinner? What if an amazing dinner was just steps away in your freezer? Join us for Club F.E.D. once a month and prepare your meals to stock your freezer to ease dinner preparation throughout the busy month. All the meals are Chef approved, made with the freshest local ingredients, and all of the shopping is done for you. Chef Danie will lead you through building all of the meals for ready prep at home. You will leave the class with four complete meals, each to feed a family of four. That is 16 individual meals, 8 meals for two or 4 meals for four. Never again will you have to stress over the question, “What’s for dinner?”

Culinary Date Night – Pesce al Cartoccio (Cooking Fish in Paper)

Work with your date to prepare a sensational meal for two. Learn new techniques and taste new ingredients on a romantic culinary journey and a true feast for the senses.

The old world trick of cooking fish in paper is definitely something worth learning about. When you use this cooking method it produces a very tender tasty fish that is full of flavor and healthy too. Come experience a class like no other where you will learn how to get the most flavor from any fish you prepare.

Menu: Fresh local fish and littleneck clams cooked with lemon, olives and tomatoes, orzo pasta primavera, steamed seasonal veggies and lemon granita.

Mom and Me Brunch

Treat Mom to a special cooking class this year for Mother’s Day. Spend time in the kitchen learning new recipes together and bonding over food just like when you were younger. Mom will really enjoy this brunch designed especially for her day. Now you can spoil her the way she always spoiled you.

Summer Seafood Grilling Spectacular

We are celebrating the kickoff of grilling season here on the Gulf Coast with our Summer Seafood Grilling Spectacular. The Gulf provides us with great options for a summer feast and this class will show you how to grill them all. Friends and family alike will love spending time in the great outdoors while enjoying the bounty of the Gulf. Join us and learn how to grill seafood well.

Grilling with Dad

Every Dad loves to grill and enjoy a great competition. Dads, we want to put your best burger recipe to the test. Bring all of your secret ingredients and your favorite sous chef, we will provide the beef and a grill to cook it on. You will grill the burgers here and they will be judged by a panel of chefs.
They will also be judged by the audience who will have a chance to purchase your burger by donation to the Mary C.

This is your chance to win prizes, bragging rights and the title of :

Pork Tenderloin can be a great meal any day of the week because it is so easy to put together. Join us for a great couple’s class where you will learn everything you need to know about how to cook a great pork tenderloin and all the sides to go with it.

What you should know about cooking classes at The Mary C Culinary Arts Cafe


Come hungry! At the end of each class, everyone gets to enjoy the delicious delights that have been prepared…

You do not need to bring anything! We provide everything.

We offer different class formats depending on the topic and chef. Each class write-up specifies the class format. Some classes are Hands On and participants will take part in chopping, assembly and preparation of meals that the class feasts on at the end of the session. We also offer Demonstration type classes where participants watch the class instructor prepare dishes with explanations along the way and participants dine on what was prepared by the chef. 

We will have lots to do. Each class is packed with the preparation of several recipes and we like to get started on time.

Class Return and Exchange Policy: If you are unable to attend a class, we will issue a full refund if you notify us a minimum of one week before the class. If the notification of withdrawal is given after this time but at least 48 hours prior to the class date, we will issue a class credit to be applied to future classes. Refunds will be processed and mailed within 30 days of cancellation. Less than 48 hours prior to the class date, refunds will not be given. Exceptions to this policy may be granted on a case by case basis or in cases of documented family or medical emergency. Call 228-818-2878 if you are unable to attend a class.

Class Locations: All Cafe classes are taught in the Mary C Culinary Arts Cafe located in The Mary C. O’Keefe Cultural Center (unless otherwise noted in the class description), 1600 Government Street, Ocean Springs, MS.

Class Information: The Mary C. O’Keefe reserves the right to cancel or reschedule classes up to the day of the class. We understand that short notice cancellations are inconvenient as such will only occur in extreme cases. In the event a class is cancelled, all students will be notified and full refunds will be given. Refunds will be processed and mailed within 30 days of cancellation The Mary C. O’Keefe reserves the right to substitute ingredients and menu items. All classes include menu recipes and the opportunity to eat what we cook in our class. We ask that all students wear closed-toe shoes in all hands-on classes. Please be prompt as our classes cover several recipes and cooking techniques and we want time to eat what we cook. We ask that cell phones be silenced during the class in respect for our chefs, instructors and class participants.
