Cooking from Scratch

Our cooking from scratch series has been a great success. This is a “basics” series for the serious cook. We will be following a curriculum used in professional cooking schools. Each class ends with a lunch prepared from the work done in the class, served with wine. You can sign up for just one of the classes or plan to attend multiple classes for a 10% discount.

Class Topic: Knife Skills

In the first class of our “Cooking from Scratch” basics series, students will sharpen their knives and learn specific techniques for cutting fruits and vegetables into all shapes and sizes. After slicing and dicing julienned carrots, bell pepper brunoise and chiffonade of basil, as well as fabricating a chicken, students will turn their handiwork into a light and healthy lunch.

Class Topic : Baking & Pastries

The flour will be flying as we roll up our sleeves and get busy rolling pie crusts. Students will prepare traditional pate brisee and pate brisee sucree to create a variety of delicious pies and pastries. We will also work with puff pastry and phyllo dough to make sweet & savory treats. This class will be a sweet ending to our “Cooking from Scratch Module 1”.

Lunch & Learn – Build a Better Biscuit

It takes a light touch to turn out flaky and tender biscuits.  Enjoy a warm and hearty lunch of Chili con Carne while Café Intern Cheri Shannon walks you through the steps of creating delicious cornmeal biscuits with cheddar and chipotle.  You will put your biscuit making skills to the test to create caramel apple shortcakes for dessert.  This menu is sure to win over your Super Bowl guests.   We will end our lunch with “chef’s choice” of something sweet. We will wrap up in time to get you back to the rest of your work day. It is a great way to have a fresh lunch and learn a cooking secret or two. The Forgotten Skills of Cooking Series - The Art of Bread

We are going to take a journey in bread-making, following the recipes of famed baker, Chad Roberston, owner and operator of the legendary Tartine Bakery in Northern California. We will make Basic Country Bread with our own home-grown starter. You can get creative with our smorgasbord of ingredients to make several variations found in the book. We will dine on Margarita Pizza and Potato Focaccia that we made ourselves along with homemade bread, butter and jam. Everyone will take home at least one bakery box of bread along with their own starter for their next batch of bread at home.

Cooks and Books: The Silver Spoon The Bible of Authentic Italian Cooking

When the Italians reach for a cookbook they grab this 2000 plus recipes ? first published in 1950. This successful Italian cookbook was re-written for the American kitchens. We will try out a selection of recipes experiencing new flavors. Our evening starts together with warm and bubbly Radicchio Bundles. We will craft crab soufflés, Roman Veal Saltimbocca (which means “jump into the mouth”), and finish our meal together with a Crown of Pears.

Date Night - Mediterranean Holiday

Let’s take a culinary vacation in the Mediterranean, dining on a variety of local dishes. IP Chef, Dean Davis will prepare several dishes as you sip wine and listen to his easy banter about the nuances of preparation. Our menu will be Herb and Goat Cheese Stuffed Tomates with Balsamic Reduction. Knife Skills 101

Chop! Chop! Chop!  That will be the sound emanating from this class. This is a fun class where students will learn the basics of KNIVES in the kitchen. Participants will learn about the different knives available and the safest way to use high-quality, chef knives to cut, chop and debone, and keep our knives sharp. You will learn proper ways to fabricate onions, to make the cuts julienne, batonnet, brunoise, small dice, medium dice and chiffonade. Café staff will be putting our sliced and diced ingredients together for a fabulous meal for us to enjoy when we are done “cutting-up”…

The Forgotten Skills of Cooking Series – Cheese Making

Cheese has become the hottest culinary trend since artisanal bread. We will explore some simple, quick and awesome cheese recipes. You will watch the chemical changes and metamorphosis from liquid to lumps of curds and finally, to pressed and molded cheese. We will consume our creations in the café with sides of fruit, bread and wine. Students will compare our own creations to purchased varieties. Everyone will take home their own cheese at the end of the class for sharing with family and friends.

Date Night – Lobster Feast

Anytime we have Lobster in the café it attracts attention. We will celebrate the Lobster in our own coastal way, with a lobster feast. Together we will make three different lobster dishes to dine on together. We will make our own fresh Lobster Rolls that are served at roadside stands all over Maine. We will make our own Pemaquid Point Lobster Pot Pies and the trendy Lobster Macaroni and Cheese.  We will end our evening with a Strawberry Mascarpone Tart with Port Glaze.

Winter means lots of delicious citrus here in South Mississippi, which means the café is turning the bountiful crop into lots of wonderful marmalades, sorbets and spritzers. We will taste several of the many citrus fruits that thrive here, including calamondin oranges, kumquats, Meyer lemons and grapefruits. Take a Wok

Participants will prepare five different dishes in woks. We start our class by using a large 22” propane wok to prepare a Chicken Lettuce Wrap appetizer that we can munch on while we prepare the next four dishes. With the café’s award-winning Ginger Margaritas in hand, We will stir-fry vegetables, master Mongolian Beef, then learn to create the staple of wok cooking, Fried Rice. We will finish up our evening together with a sweet ending of Thai Fried Pineapple. So let’s all be Wok Stars!

Cultural Night at the Cultural Center – February Featured Country…Columbia

The Mary C is offering an evening at the Mary C. O’Keefe Cultural Center that includes food and entertainment designed to give a flavor of the featured country. Each month we will partner with members of our International community here on the coast to expose us all to some of the flavors and sounds of another country. In February, we will celebrate Columbia with Edwin Gallego and friends. We will have live cooking stations in the café offering dishes and beverages with a Columbian flair. We will have musical entertainment with Colombian music.  You won’t want to miss some culture at the cultural center!

Come hungry! At the end of each class, everyone gets to enjoy the delicious delights that have been prepared…

You do not need to bring anything! We provide everything, including an embroidered IP Culinary Arts Cafe apron for you wear to keep you neat and clean while you cook.

We offer different class formats depending on the topic and chef. Each class write-up specifies the class format. Some classes are Hands On and participants will take part in chopping, assembly and preparation of meals that the class feasts on at the end of the session. We also offer Demonstration type classes where participants watch the class instructor prepare dishes with explanations along the way and participants dine on what was prepared by the chef. 

We will have lots to do. Each class is packed with the preparation of several recipes and we like to get started on time.

Class Return and Exchange Policy: If you are unable to attend a class, we will issue a full refund if you notify us a minimum of one week before the class. If the notification of withdrawal is given after this time but at least 48 hours prior to the class date, we will issue a class credit to be applied to future classes. Refunds will be processed and mailed within 30 days of cancellation. Less than 48 hours prior to the class date, refunds will not be given. Exceptions to this policy may be granted on a case by case basis or in cases of documented family or medical emergency. Call 228-818-2878 if you are unable to attend a class.

Class Locations: All cafe classes are taught in the new IP Culinary Arts Cafe of the Mary C. O’Keefe Cultural Center (unless otherwise noted in the class description), 1600 Government Street, Ocean Springs, MS.

Class Information: The Mary C. O’Keefe reserves the right to cancel or reschedule classes up to the day of the class. We understand that short notice cancellations are inconvenient as such will only occur in extreme cases. In the event a class is cancelled, all students will be notified and full refunds will be given. Refunds will be processed and mailed within 30 days of cancellation The Mary C. O’Keefe reserves the right to substitute ingredients and menu items. All classes include menu recipes and the opportunity to eat what we cook in our class. We ask that all students wear closed-toe shoes in all hands-on classes. Please be prompt as our classes cover several recipes and cooking techniques and we want time to eat what we cook.
