Dude Food

Real men belong in our Café just as much as the ladies. Here is another class for our fellas, just in time for pre-season football. We are going to “training camp” to train in preparing simple and easy foods for entertaining while still cheering on your favorite team or tailgating to a game.  Learn the secrets and tricks of cooking and serving steak sliders, buffalo chicken dip and, for your health conscious friends, fruit kabobs. Your new culinary skills will have your friends calling you “the undisputed King of the kitchen!”

East Meets West

If you are lured by the freshness of tuna and are fascinated watching the amazing artistry & skills of Asian masters as they create spectacular fresh sushi, then come join us again for this popular class. IP Chef Anthony Rametta will share the simple and fascinating secrets to preparing fresh fish and sushi. They will start with the importance of using fresh seafood by disclosing the keys of what to look for in fresh Ahi Tuna. Participants will learn how to make fabulous Tuna Tartare, Ahi Poke and Spicy Tuna Roll in minutes with perfect presentation. Chef will cover the fundamentals of sushi and share their tips for surprising your guests with your newly acquired sushi skills.

Young Chefs in the Café

Hey What’s For Dinner! II-Spaghetti

Carol Messer is back in the Café with our Young Chefs working on creating healthy and tasty meals that they can prepare on their own and the whole family can enjoy. Carol will be working to instill life-long culinary skills, so that participants can prepare a simple meal at home for the family. Carol will provide some solid, time-tested tips to help teenagers get comfortable in the kitchen and provide confidence for parents to let them get started, clean up as they go and serve dinner. Participants will learn how to make a complete, well-balanced meal that includes a salad, entre and a dessert.

Date Night – Coastal Casual!

Need to be swept off of your feet? Join us in the café for a special evening out, away from all the distractions. Chef Justin Kittle returns to treat us to an evening of culinary romance for couples. Chef will start your evening off with a demonstration of his secret recipe for Jumbo Lump Crab Cakes with Remoulade Sauce, for the entrée, Snapper Clairborne (Pan Fried and topped with Crab Meat) served over Gnocchi and topped with Beurre Blanc. To finish off a fun and relaxing evening with your honey, Chef will demonstrate how to make Blondies A La Mode with Butterscotch Topping.

The Basics: Knife Skills 101

Chop! Chop! Chop! That will be the overwhelming sound emanating from this class. We will learn the basics of KNIVESin the kitchen. Participants will learn about the different knives available and the safest way to use high-quality, sharp chef knives to cut, chop and bone as well as how to keep them sharp. You’ll also learn proper ways to fabricate onions and the onion family, and will practice your newly learned skills on stacks of vegetables, learning how to make Julianne, batonnet, brunoise, small dice, medium, dice, paysanne and torne’ cuts. Participants will even learn to "French Cut"a chicken. While we are chopping, one of our staff will be putting our chopped and diced ingredients together for a light meal for us to enjoy when we are done “cutting up”...

Girls Night Out – Venice, Italy

Ladies, don’t miss this class! Girls night out is a relaxed class where we do most of the chopping and preparation and of course all the clean-up. On this gastronomic trip to the romantic city of Venice, Italy we will prepare several exotic dishes together.  Participants will be transported to Harry's Bar as they sip bellinis and prepare traditional dishes of the Veneto region of Italy like a traditional creamy risotto and Fruitti di Mare (fruits of the sea). We willfinish with sgroppino, the frothylemon treat enjoyed byVenetians on hot summer nights.

Texas Style Cookout

We will take a culinary trip to Texas, where we will prepare dishes to feast on at the end of our evening together. We will grill the whole tenderloin, rubbed with our own café made rub and make cowboy biscuits and several additional “from the open range” recipes.  Now get along little doggies and let’s have an evening of barbequing fun at the café.

Fresh from the Farm

Eating seasonally allows you to enjoy the ripest and freshest foods when they are at their peak. When you buy fresh, locally grown foods, it is good for our local economy and good for our regional family farmers.  Making a visit to your local farmers markets provides an opportunity to try new foods that you won’t find in your local grocery stores. We will make a tasty summer squash soup with a fresh market garden salad, a farm fresh rustic vegetable tart, fruit cobbler, salsa, watermelon agua fresco and a roasted vegetable lasagna.

The Basics: Piping on Pastry

Chef John LaCroix joins us again in the café to work with us on the basics of piping beautiful and creative designs on pastries. This is a unique class, everyone will participate. At the end of the class you will be comfortable making and filling pastry bags and using several techniques for creating different design styles. Chef John makes all his classes in the café special and you don’t want to miss this one. With the holidays around the corner, this will be a skill you can use to amaze your friends and family.

Cup Cake Decorating for Teens

We are inviting our young friends into the Café after school to learn the basics of decorating  trendy cupcakes.  Shelly Farabee of Buzzin’ Bee Cakes will introduce participants to the art. The class will start with baking cupcakes. The young chefs will move rapidly to making their own frosting.  Shelly will give them instruction on the basics of decorating: how to color frosting, how to fill and use pastry bags, how to make fun and creative cupcake designs. With these basics, we will let the creativity fly.  Each participant will take their own cupcake creations home to the family.

Tour de Fromage

Chef Chris Poplin will join us again in the IP Culinary Arts Café for a world tour of cheese. We will sample all kinds of cheeses and taste dishes made by this wonderful chef that feature cheese as one of their primary ingredients.

Cooks –n-Books Series:

My Life in France by Julia Child

New monthly series for the café. This class will focus on the book and recipes of My Life in France by Julia Child. The recipes we will prepare in the class will include Trout Meuniere, one of Julia’s favorite with a coast twist, Salad Verte with Vinaigrette, Coq au Vin and Tart au Pommes, and of course we will open a bottle of wine and share the toast….“Bon Appetit!” in the true spirit of Julia.

Bourbon & BBQ

 It is that time again gentlemen…..pick up your favorite Guayaberas shirt from the cleaners, find your fedora and get in your adventurous frame of mind for an evening of bourbon and BBQ at the Café. Kurt Lind from the IP will pour a variety of bourbons and demonstrate an innovative method from Japan of serving bourbon with an ice sphere. If you are asking why…the sphere melts slower and allows the bourbon to be cooled, but not watered down. One of the IPs fabulous chefs will cook up different dishes with bourbon as a key ingredient.  Don’t forget to bring your cigars.  Class will end with cigars around the Mary C. fountain outside.

This is a class for the men; after all…the ladies have Girls Night Out!

What you should know about cooking classes at the IP Culinary Arts Café:

  • Come hungry! At the end of each class, everyone gets to enjoy the delicious delights that have been prepared…
  • You do not need to bring anything! We provide everything, including an embroidered IP Culinary Arts Cafe apron for you to take home to keep you neat and clean when you try out your new recipes at home.
  • We offer different class formats depending on the topic and chef. Each class write-up specifies the class format. Some classes are Hands On and participants will take part in chopping, assembly and preparation of meals that the class feasts on at the end of the session. We also offer Demonstration type classes where participants watch the class instructor prepare dishes with explanations along the way and participants dine on what was prepared by the chef. 
  • We will have lots to do. Each class is packed with the preparation of several recipes and we like to get started on time.

Class Return and Exchange Policy: Up to seven days prior to the class date, full refunds will be issued when accompanied by the original receipt. Up to 48 hours prior to the class date, we will issue a class exchange with the original receipt. Less than 48 hours prior to the class date, refunds will not be given. Class Locations: All cafe classes are taught in the new IP Culinary Arts Cafe of the Mary C. O’Keefe Cultural Center (unless otherwise noted in the class description), 1600 Government Street, Ocean Springs, MS.

Class Information: The Mary C. O’Keefe reserves the right to cancel or reschedule classes. In the event a class is cancelled, all students will be notified and full refunds will be given. The Mary C. O’Keefe reserves the right to substitute ingredients and menu items. All classes include menu recipes and the opportunity to eat what we cook in our class. Weask that all students wear closed-toe shoes in all hands-on classes. Please be prompt as our classes cover several receipes and cooking techniques as we want time to eat what we cook. We ask that cell phones be silenced during the class in respect for our chefs, instructors and class participants.
