MAY

Cooking Methods - Sauteeing, Pan Frying & Deep Frying
Nothing beats a crunchy fried green tomato. In this class, students will heat up their pans and prepare a variety of dishes from home-style to haute cuisine, including Chicken Scallopini and Corn Fritters. We will finish our meal with deep fried Beignets and a refreshing Peach Coulis.

Duck!
Take a walk on the wild side with Chef Patrick Heim of Taste! Catering, as we cook up a delicious dinner of Duck and Oyster Gumbo, Duck Crackings, Hunter’s Poppers and Balsalmic Strawberry Cake with Chantilly Cream for dessert. Chef Patrick will regale us with stories of duck hunting in the Louisiana swamps as students learn the best methods for preparing this wild delicacy.

Pastry
The flour will be flying as we roll up our sleeves, then get busy rolling pie crusts. Student will prepare traditional Pate Brisee and Pate Brisee Sucree to create a variety of delicious pies and pastries. We will also work with puff pastry and phyllo dough to make sweet and savory treats.

JUNE

Baking
What is the secret to light, fluffy biscuits? Cold butter and a soft touch. Join us today as we make a mountain of Buttermilk Biscuits, Banana Nut Muffins and Zucchini Bread. By the end of the class, our students will be the best biscuit bakers in the south.

Mary C Culinary Academy
This is a summer camp for serious young chefs. We will begin the week discussing kitchen and food safety and move on to basic knife skills. Students will learn fundamental skills, including how to create soups, stocks and sauces, cooking methods such as braising, roasting and sautéing and the proper way to make the perfect piecrust. Graduates of the Mary C Culinary Academy will have mastered the building blocks to becoming great chefs. Perhaps one of them will come back to their alma mater and teach one day?

A Trip to the Delta
Have you gotten your copy of Eat Drink Delta yet? Well, now is your chance. Hailed by Saveur Magazine as “a keeper of a book, one that inspires celebration both in the kitchen and on the road,” Eat Drink Delta is part cookbook, part travelogue and all delicious fun. Author and Mississippi native Susan Puckett will be with us in the Café on Saturday, June 8 to tell tales of her culinary adventures in the Delta while the Café staff whips up a delicious Delta meal, including Chicken Brined in Sweet Tea, Mississippi Grits with Shrimp and Tomato Confit and Lemon Ice Box Pie for dessert. On Saturday, June 8, the Mary C will be at the Ocean Springs Fresh Market in the Depot parking lot, serving up stacks of Craig Claiborne’s mom’s Hot Cakes with Orange Syrup for you to sample while Susan autographs your new favorite
cookbook.

Ice Creams and Sorbert
We will end our “Cooking from Scratch” series with two scoops and a big
smile. Students will learn to make French style custard ice creams and
lighter Italian gelatos, as well as how to turn summer’s bumper crop of
blueberries into a refreshing frozen treat.

Summerfest - Campfire Cooking
Join us for a relaxing evening of good food and conversation as we learn the secrets to creating a delicious meal over an open fire. We will turn our catch of the day into Hobo Packs, with dill, garlic, mushrooms, beer, potatoes, carrots and, of course, plenty of butter. For dessert, we will be making
Skillet Shortcakes with Strawberries. Perhaps we will end the evening with a rousing rendition of Kum ba yah?

What you should know about cooking classes at The Mary C Culinary Arts Cafe


Come hungry! At the end of each class, everyone gets to enjoy the delicious delights that have been prepared…

You do not need to bring anything! We provide everything, including an embroidered IP Culinary Arts Cafe apron for you wear to keep you neat and clean while you cook.

We offer different class formats depending on the topic and chef. Each class write-up specifies the class format. Some classes are Hands On and participants will take part in chopping, assembly and preparation of meals that the class feasts on at the end of the session. We also offer Demonstration type classes where participants watch the class instructor prepare dishes with explanations along the way and participants dine on what was prepared by the chef. 

We will have lots to do. Each class is packed with the preparation of several recipes and we like to get started on time.

Class Return and Exchange Policy: If you are unable to attend a class, we will issue a full refund if you notify us a minimum of one week before the class. If the notification of withdrawal is given after this time but at least 48 hours prior to the class date, we will issue a class credit to be applied to future classes. Refunds will be processed and mailed within 30 days of cancellation. Less than 48 hours prior to the class date, refunds will not be given. Exceptions to this policy may be granted on a case by case basis or in cases of documented family or medical emergency. Call 228-818-2878 if you are unable to attend a class.

Class Locations: All cafe classes are taught in the new IP Culinary Arts Cafe of the Mary C. O’Keefe Cultural Center (unless otherwise noted in the class description), 1600 Government Street, Ocean Springs, MS.

Class Information: The Mary C. O’Keefe reserves the right to cancel or reschedule classes up to the day of the class. We understand that short notice cancellations are inconvenient as such will only occur in extreme cases. In the event a class is cancelled, all students will be notified and full refunds will be given. Refunds will be processed and mailed within 30 days of cancellation The Mary C. O’Keefe reserves the right to substitute ingredients and menu items. All classes include menu recipes and the opportunity to eat what we cook in our class. We ask that all students wear closed-toe shoes in all hands-on classes. Please be prompt as our classes cover several recipes and cooking techniques and we want time to eat what we cook. We ask that cell phones be silenced during the class in respect for our chefs, instructors and class participants.
